On the roof of the hotel, our bees forage on herbs and aromatic plants grown on site, to provide the honey that will be used in the recipes, desserts, breakfast buffets & cocktails. The chef, Jean-Philippe Watteyne, and his team have also been foraging for the best of Belgian produce to serve a feast for the eyes and taste buds. The view on Leopold Park, the chef’s show cooking from his semi-open kitchen or the glassed wine cellar are also among the most seductive.

Matteo Vannini was born in Florence, Italy. A graduate of the Aurelio Saffi Professional Institute for Enogastronomy and Hospitality Services in Florence, he has been cooking since the age of 14. A semi-finalist in the renowned international competition “San Pellegrino Youth Chef 2018”, he earned a Michelin star during his 3 years as a chef at Da Mimmo in Woluwé-Saint-Lambert.
